Lobster and Grapefruit Salad
- 400g raw lobster
- 1 pink grapefruit
- 2 tbsp mayo
- ½ cucumber
- 200g snow peas
- 80g salad leaves
- Cook the lobster according to packet instructions, then carefully remove the meat and cut into bite-sized pieces. Segment the grapefruit over a bowl to catch the juice, then blend 3 tbsp of the juice with the mayo.
- Slice the cucumber into half moons, and cut the snow peas in half lengthways. Arrange everything on 2 plates, and top with some salad leaves and a dollop of the dressing. Easy!
