Lobster and Parmesan Linguine
- 400g cooked whole lobster, meat picked
- 150g linguine
- 50g butter
- 2 chopped garlic cloves
- 1 lemon, zest and juice
- ½ tsp chilli flakes
- 5 tbsp chopped parsley
- 6 tbsp grated parmesan cheese
- Cook the linguine in boiling salted water until al dente, then drain. Heat the butter in a frying pan and add the garlic, cook for a minute and then stir in the lemon juice and zest, the chilli, lobster meat and parsley.
- Toss the mixture for 1 minute, then add the linguine and parmesan. Mix to coat the pasta, then season with black pepper and serve with more parmesan on top.
