Lobster and Parmesan Linguine

  • 400g cooked whole lobster, meat picked
  • 150g linguine
  • 50g butter
  • 2 chopped garlic cloves
  • 1 lemon, zest and juice
  • ½ tsp chilli flakes
  • 5 tbsp chopped parsley
  • 6 tbsp grated parmesan cheese
  • Cook the linguine in boiling salted water until al dente, then drain. Heat the butter in a frying pan and add the garlic, cook for a minute and then stir in the lemon juice and zest, the chilli, lobster meat and parsley.
  • Toss the mixture for 1 minute, then add the linguine and parmesan. Mix to coat the pasta, then season with black pepper and serve with more parmesan on top.
