Lobster, Melon and Cucumber Cocktail

  • 750g cooked lobster meat, chopped
  • 180g ripe melon, chopped
  • 100g cucumber, chopped
  • 70g quality mayo
  • 1 tbsp soured cream
  • 2 tbsp ketchup
  • 1.5 tsp creamed horseradish sauce
  • Dash of Tabasco
  • 1 tsp lemon juice
  • 2 small gem lettuces, leaves separated and shredded
  • Pinch of smoked paprika
  • Make the dressing by mixing the mayo, soured cream, ketchup, horseradish, Tabasco and lemon juice in a bowl. Divide the lettuce leaves between 4 prawn cocktail dishes, then gently stir the lobster meat, melon and cucumber into the dressing, and divide equally between the glasses. Sprinkle with paprika and serve with brown bread - so simple, so delicious!
