Lychee and Coconut Oysters

  • 4 fresh shucked oysters
  • 100g coconut cream
  • 1 tsp fresh lemon juice
  • 2 lychees
  • 8 rose petals
  • 1g xanthan gum
  • Mix the coconut cream, lemon juice and xanthan until smooth. Prepare the lychees by removing the skin and stones, then cutting the flesh into 4 pieces.
  • Spoon a little of the coconut mixture onto each oyster, then garnish with a few pieces of lychee and a rose petal to serve. Sheer perfection!
