Macanese Prawns

  • 6 large whole prawns
  • 5 tbsp olive oil
  • 3 tbsp chopped garlic
  • 150g chopped onion
  • 2 tbsp chopped spring onions
  • 50g chopped red chillies
  • Salt and pepper
  • Preheat the oven to 180C. Carefully butterfly the prawns while keeping the shell intact. Heat a wok, then add 2 tbsp of oil, the garlic, onion, chillies and spring onions and stir-fry for 2 mins. Season well, then transfer to a bowl.
  • Add the rest of the oil and fry the prawns for 30 seconds on each side. Place the prawns in a baking tray, and stuff with the garlic and onion mixture. Reserve any remaining stuffing. Cook in the oven for 4-5 mins, then mix the rest of the stuffing with melted butter and drizzle over the top.
