Mackerel and Preserved Lemon Salad

  • 1 mackerel fillet
  • Large pinch of ground cumin and coriander
  • 1 garlic clove, halved
  • 7 cherry tomatoes, halved
  • Handful of basil
  • ¼ preserved lemon, thinly sliced
  • ½ fresh lemon, zest and juice only
  • Handful of rocket and watercress salad
  • Preheat the grill to medium and line a baking tray with foil. Pop the mackerel fillet on the tray, skin-side down. Rub with the ground spices and some seasoning, and grill for 3 mins on each side, or until cooked through with crisp skin.
  • Meanwhile, rub the insides of a serving bowl with the garlic halves, then discard. Add the tomatoes, preserved lemon slices, basil, lemon zest and juice to the bowl with the salad leaves. Season, mix, then serve with the mackerel fillet on top.
