Mackerel with Apple Salad
- 200g new potatoes
- 1 green apple, sliced
- 8 sliced radishes
- ½ kohlrabi, sliced into matchsticks
- ½ lemon, juice only
- 4 mackerel fillets
- 1 tbsp olive oil
- 4 tbsp mayo
- 2 tbsp chopped parsley
- 1 tbsp chopped dill
- Chopped walnut halves
- ½ tbsp white wine vinegar
- Simmer the potatoes in salted water until tender, then drain and set aside. In a bowl, toss together the kohlrabi, apple and radishes in some lemon juice. Meanwhile, heat up a griddle pan and brush the mackerel with oil, and grill for 4 mins, skin-side up, until cooked through.
- Combine the new potatoes with the apple, kohlrabi, radishes, mayo, chopped herbs, nuts and vinegar. Season well, and serve alongside the mackerel fillets with a scattering of extra dill.
