Mackerel with Apple Salad

  • 200g new potatoes
  • 1 green apple, sliced
  • 8 sliced radishes
  • ½ kohlrabi, sliced into matchsticks
  • ½ lemon, juice only
  • 4 mackerel fillets
  • 1 tbsp olive oil
  • 4 tbsp mayo
  • 2 tbsp chopped parsley
  • 1 tbsp chopped dill
  • Chopped walnut halves
  • ½ tbsp white wine vinegar
  • Simmer the potatoes in salted water until tender, then drain and set aside. In a bowl, toss together the kohlrabi, apple and radishes in some lemon juice. Meanwhile, heat up a griddle pan and brush the mackerel with oil, and grill for 4 mins, skin-side up, until cooked through.
  • Combine the new potatoes with the apple, kohlrabi, radishes, mayo, chopped herbs, nuts and vinegar. Season well, and serve alongside the mackerel fillets with a scattering of extra dill.
