Malay Noodle Salad
- 1 tbsp oil
- 1 red chilli, chopped
- 1 garlic clove, chopped
- 2.5cm piece of ginger, grated
- 3 bulbs of pak choi or similar, leaves separated
- 2 tbsp soy sauce
- 2 tsp sesame oil
- 150g dried egg noodles, cooked
- ½ lime, juice only
- Peanuts, to garnish
- Chopped coriander, to garnish
- Heat the oil in a wok, and stir fry the chilli, ginger, and garlic for a minute or so. Add the pak choi leaves and stir fry for 2 mins, or until wilted, then pour in the soy sauce and lime juice, and leave to simmer for 2 mins more.
- Add the cooked noodles and stir well, then serve on a plate with a garnish of peanuts and chopped coriander.
