Malay Noodle Salad

  • 1 tbsp oil
  • 1 red chilli, chopped
  • 1 garlic clove, chopped
  • 2.5cm piece of ginger, grated
  • 3 bulbs of pak choi or similar, leaves separated
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 150g dried egg noodles, cooked
  • ½ lime, juice only
  • Peanuts, to garnish
  • Chopped coriander, to garnish
  • Heat the oil in a wok, and stir fry the chilli, ginger, and garlic for a minute or so. Add the pak choi leaves and stir fry for 2 mins, or until wilted, then pour in the soy sauce and lime juice, and leave to simmer for 2 mins more.
  • Add the cooked noodles and stir well, then serve on a plate with a garnish of peanuts and chopped coriander.
