Mango and Lime Chicken Wings

  • 1 kg chicken wings
  • Oil for drizzling
  • 200g mango chutney
  • Zest of 1 lime
  • 1 sliced red chilli
  • Coriander leaves, roughly chopped
  • Preheat your oven to 180C. Toss the chicken wings in a little oil, and season well with salt and pepper. Cook for 30 minutes, then brush the wings all over with a mixture of lime zest and mango chutney. Return to the oven for a further 20 minutes, giving them a toss in the marinade halfway through. Serve with a scattering of chilli and coriander.
