Mango and Prawn Noodles
- 225g pack of rice noodles
- 1 carrot, chopped into matchsticks
- 2 limes, juice only
- 1 tbsp Thai fish sauce
- 1 red chilli, sliced
- Small pack of mint and coriander, chopped
- 200g mango chunks
- 220g cooked prawns
- 90g salted peanuts, crushed
- Pop the noodles in a large bowl, and cover with boiling water. Leave to stand for 4 mins, then drain and rinse with cold water. Tip the drained noodles into a large salad bowl, and toss in the carrot. Mix the lime juice and fish sauce in a small bowl, stir in the herbs and chilli, and pour half of this dressing over the noodles. Toss together.
- Pile the prawns and mango chunks on top, and drizzle with the remaining dressing. Scatter over the crushed nuts, and serve.
