Mango, Mint, and Quinoa Salad
- 110g quinoa cooked to packet instructions
- 1 tbsp chopped mint
- 4 whole spring onions, chopped
- 2 tbsp chopped coriander
- 1 mango, chopped finely
- 2 tbsp olive oil
- ½ lemon, juice only
- Simply combine all the ingredients in a bowl, and gently toss together. Serve on its own, or as a side with halloumi or grilled chicken or fish.
