Mango, Mint, and Quinoa Salad

  • 110g quinoa cooked to packet instructions
  • 1 tbsp chopped mint
  • 4 whole spring onions, chopped
  • 2 tbsp chopped coriander
  • 1 mango, chopped finely
  • 2 tbsp olive oil
  • ½ lemon, juice only
  • Simply combine all the ingredients in a bowl, and gently toss together. Serve on its own, or as a side with halloumi or grilled chicken or fish.
