Mediterranean Prawns
- 1 red onion, finely sliced
- 250g cherry tomatoes
- 50g pitted olives
- 180g peeled king prawns
- 2 tbsp olive oil
- 75g feta
- 10g chopped parsley
- 4 barbecued flatbreads, to serve
- Salad leaves, to serve
- Fire up the barbecue and leave to glow. Meanwhile, cut 2 large sheets of foil and lay on a work surface. Toss the red onion, tomatoes, olives and prawns in a bowl, then drizzle with the olive oil and seasoning.
- Divide the prawn mixture between the foil sheets, then fold over the edges to make loose parcels. Place the parcels on the barbecue for 10-12 mins or until the prawns are cooked through. Open the parcels and scatter with parsley and feta, then serve with a heap of salad and some barbecued flatbreads. Delicious!
