Mediterranean Prawns

  • 1 red onion, finely sliced
  • 250g cherry tomatoes
  • 50g pitted olives
  • 180g peeled king prawns
  • 2 tbsp olive oil
  • 75g feta
  • 10g chopped parsley
  • 4 barbecued flatbreads, to serve
  • Salad leaves, to serve
  • Fire up the barbecue and leave to glow. Meanwhile, cut 2 large sheets of foil and lay on a work surface. Toss the red onion, tomatoes, olives and prawns in a bowl, then drizzle with the olive oil and seasoning.
  • Divide the prawn mixture between the foil sheets, then fold over the edges to make loose parcels. Place the parcels on the barbecue for 10-12 mins or until the prawns are cooked through. Open the parcels and scatter with parsley and feta, then serve with a heap of salad and some barbecued flatbreads. Delicious!
