Mediterranean Sausage Casserole

  • 400g pack of mixed Mediterranean vegetables
  • 1 tbsp olive oil
  • 4 thick herbed pork sausages
  • 200g green beans, trimmed
  • 1 tbsp tomato puree
  • 1 tsp dried oregano
  • 350ml veg stock
  • Chopped parsley, to garnish
  • Preheat the oven to 220C. Add the vegetables to a roasting tray with 1 tbsp of oil and some seasoning, and roast for 15 mins while you fry the sausages according to packet instructions, or until browned all over and cooked through. Add the beans, tomato puree and oregano to the pan.
  • Add the roasted vegetables to the pan with the sausages and pour in the stock. Simmer for 10 mins, or until the sauce has reduced a little and thickened, then scatter with parsley, season to taste and serve with crusty bread. Delicious!
