Mexican Ribs
- 4 big beef ribs
- 1 bunch of coriander, chopped
- 4 limes, juice only
- 2 shallots, chopped
- 4 tbsp olive oil
- 2 tsp ground cumin
- ½ tsp ground coriander
- 3 garlic cloves, chopped
- 1 jalapeno, chopped
- Guacamole and salsa, to serve
- Pop the ribs in a large tray and add the rest of the ingredients, and stir to combine. Leave to marinate at room temperature for an hour.
- Heat a large griddle, add the ribs and cook for 2 mins on each side. Warm the leftover marinade in a small saucepan, and when ready to serve, drizzle over the meat. Enjoy with all your favourite Mexican sides!
