Mexican Ribs

  • 4 big beef ribs
  • 1 bunch of coriander, chopped
  • 4 limes, juice only
  • 2 shallots, chopped
  • 4 tbsp olive oil
  • 2 tsp ground cumin
  • ½ tsp ground coriander
  • 3 garlic cloves, chopped
  • 1 jalapeno, chopped
  • Guacamole and salsa, to serve
  • Pop the ribs in a large tray and add the rest of the ingredients, and stir to combine. Leave to marinate at room temperature for an hour.
  • Heat a large griddle, add the ribs and cook for 2 mins on each side. Warm the leftover marinade in a small saucepan, and when ready to serve, drizzle over the meat. Enjoy with all your favourite Mexican sides!
