Mexican Ribs Recipe
What you'll need:
- 4 beef ribs
- 1 bunch of coriander, chopped
- Juice of 4 limes
- 2 shallots, chopped
- 4 tbsp olive oil
- 2 tsp ground cumin
- ½ tsp ground coriander
- 3 chopped garlic cloves
- 1 jalapeno chilli, chopped
- Salsa, guacamole, and tortilla chips to serve
Time: 30 mins
Serves: 4
Method
First
Put the ribs into a large tray, and add all of the other ingredients. Stir well, and leave to marinate for at least 1 hour at room temperature.
Second
Heat a large griddle pan on a high flame, and cook the ribs on each side for 2 minutes. Warm any remaining marinade in a small pan, and serve the ribs on a plate, with the sauce drizzled over the top. Serve alongside dips and chips, and enjoy.
