Mint and Zucchini Salad

  • ½ red onion, finely sliced
  • 1 lemon, zest and juice only
  • 2 zucchinis
  • Large handful of fresh mint leaves
  • 2 tbsp olive oil
  • Combine the lemon juice and onion in a bowl, season well, and set aside for 10 mins. Meanwhile, slice the zucchinis with a vegetable peeler to obtain long, thin ribbons. Put them into the bowl with the onion and lemon juice, and stir in the mint leaves and oil. Toss together, and serve as a refreshing side.
