Miso Aubergines Recipe

What you'll need:

  • 2 small aubergines, sliced in half
  • vegetable oil
  • 100g giant couscous or similar
  • 50g miso
  • 1 red chilli, sliced
  • ½ pack of coriander, chopped
Serves: 2
Time: 50 minutes

Method

First

Preheat your oven to 180C, and prepare the aubergines by slashing the flesh in a criss-cross pattern with a sharp knife. Place on a baking tray, and brush with oil.

Second

Make a thick miso paste by mixing the miso with 25ml of water. Spread this paste over the aubergines, cover the baking tray with foil, and roast for a good 30 minutes. Once this time has passed, remove the foil, season the aubergines well, and roast for a further 15-20 minutes.

Third

Prepare the couscous according to the instructions on the pack, and when cooked, mix with the sliced chilli and plenty of seasoning, and scatter the chopped coriander over the top. Serve the roasted aubergines on a bed of the couscous, alongside some green leafy veg.
