Moreton Bay Bugs with Garlic Butter
- 1kg raw Moreton Bay Bugs
- Olive oil for drizzling
- Lemon wedges to serve
- For the Butter
- 100g softened butter
- 1 tbsp chopped parsley
- 1 tsp chopped oregano
- 1 crushed garlic clove
- Preheat your barbecue. Combine the butter ingredients in a bowl and season well, before stirring thoroughly to combine. Set aside in the fridge.
- Place the bugs on a tray, cut side up, and drizzle with oil and seasoning. Place the bugs on the barbecue shell side down, then close the lid and leave to cook for 5-6 minutes, before flipping them over and finishing them for another minute over the coals. Transfer the bugs to a platter and generously slather with garlic butter, before serving with more butter on the side and some lemon wedges.
