Moreton Bay Bugs with Garlic Butter

  • 1kg raw Moreton Bay Bugs
  • Olive oil for drizzling
  • Lemon wedges to serve
  • For the Butter
  • 100g softened butter
  • 1 tbsp chopped parsley
  • 1 tsp chopped oregano
  • 1 crushed garlic clove
  • Preheat your barbecue. Combine the butter ingredients in a bowl and season well, before stirring thoroughly to combine. Set aside in the fridge.
  • Place the bugs on a tray, cut side up, and drizzle with oil and seasoning. Place the bugs on the barbecue shell side down, then close the lid and leave to cook for 5-6 minutes, before flipping them over and finishing them for another minute over the coals. Transfer the bugs to a platter and generously slather with garlic butter, before serving with more butter on the side and some lemon wedges.
