Moreton Bay Bugs with Herb and Garlic Butter

  • 1kg raw Moreton Bay bugs
  • Olive oil for drizzling
  • Lemon wedges to serve
  • For the Butter
  • 100g softened butter
  • 1 tbsp chopped parsley
  • 1 tbsp chopped oregano
  • 1 crushed garlic clove
  • Preheat the barbecue to medium-high. Stir the ingredients for the butter together in a small bowl and season well. Cover and chill until ready to use.
  • Place the bugs on a tray, cut side up, and drizzle with oil and seasoning. Place the bugs, shell side-down, onto the barbecue. Close the lid and cook for 7 mins, then turn and cook on the flesh side for a minute or two to lightly char. Brush the bugs with butter and serve with some more butter and lemon wedges on the side. Perfect!
