Moroccan Carrot Salad
- A handful of raisins
- 1 orange, zest and juice
- 500g peeled carrots
- ½ tsp each ground cumin and coriander
- 2 pinches of ground cinnamon
- 2 tsp white wine vinegar
- Chopped mint leaves
- Squeeze of lemon
- Salt and pepper
- Soak the raisins in the orange juice for 15 mins. Grate the carrots and place in a salad bowl with the orange zest, plumped raisins and the orange juice. Stir through the vinegar and spices, then stir in the mint leaves and seasoning. Perfect as a side for grilled meats or a tagine!
