Moroccan Chicken with Apricots

  • 1 chopped onion
  • 3 crushed garlic cloves
  • 275ml chicken stock
  • 4 chicken breast fillets
  • 400g tin of chopped tomatoes
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • Handful of chopped dried apricots
  • 2 tbsp honey
  • Chopped coriander
  • Couscous, to serve
  • Add the garlic, onion and chicken stock to a saucepan and bring to a simmer. Season well and simmer for 5 mins or until reduced by about half. Add the tomatoes, chicken, spices and apricots, cover with the lid and gently simmer for one hour.
  • Just before serving, stir the chopped coriander and the honey into the pot and cook for 5 mins more. Season to taste, then serve with couscous and a dollop of yoghurt - delicious!
