Moroccan Kofte Recipe
What you'll need:
- 8 wooden skewers, soaked in water
- 500g minced lamb
- 1 small red onion, chopped
- 1 tbsp chopped mint
- 1 tbsp chopped coriander
For sauce
- 1 clove of garlic, finely chopped
- 2 x cans of chopped tomatoes
- 2 tsp harissa paste
- 1 tbsp olive oil
- 1 tsp sugar
- 200g Greek yoghurt
- 2 tbsp toasted pine nuts
Serves: 4
Time: 35 minutes
Method
First
Use your hands to mix the meat in a bowl with the onion and herbs, as well as plenty of salt and pepper. Shape the meat into 8 long sausages of about 10 cm, and thread them onto the skewers.
Second
Next, make the sauce. Heat some oil in a pan, and quickly fry the garlic. Add the tomatoes, the harissa, sugar and lots of seasoning. Simmer for 20 minutes until nicely thickened and smelling gorgeous.
Third
Under a hot grill or on a griddle pan, cook the kofte for about 8 minutes, or until well browned all over. To serve, spoon the sauce onto a plate, top with a dollop of yoghurt, and then place the skewer on top of that. Scatter with the pine nuts, and serve with hot pitta. Nice!
