Moroccan Spiced Mince

  • 2 tbsp oil
  • 2 onions, chopped
  • 350g lamb mince
  • 1 tbsp ground cumin
  • 1 tsp ground cinnamon
  • 2 tsp turmeric
  • 100g dried apricots, quartered
  • 600ml veg stock
  • Couscous, cooked, to serve
  • Heat the oil in a nonstick pan, and cook the onions for 5 mins to soften. Stir in the mince and spices, and fry until browned. Add the apricots and stock, then simmer gently for 10-15 mins. Serve immediately with fluffy couscous and flatbreads.
