Moroccan Spiced Mince
- 2 tbsp oil
- 2 onions, chopped
- 350g lamb mince
- 1 tbsp ground cumin
- 1 tsp ground cinnamon
- 2 tsp turmeric
- 100g dried apricots, quartered
- 600ml veg stock
- Couscous, cooked, to serve
- Heat the oil in a nonstick pan, and cook the onions for 5 mins to soften. Stir in the mince and spices, and fry until browned. Add the apricots and stock, then simmer gently for 10-15 mins. Serve immediately with fluffy couscous and flatbreads.
