Mozzarella, Melon and Salami Salad

  • 100g Milan-style salami
  • 70g peppery salad leaves
  • ½ green melon, cut into 1.5cm cubes
  • 150g mozzarella ball
  • 30g basil leaves
  • ½ red chilli, diced
  • For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Pinch of sugar
  • Preheat the oven to 200C. Cook the salami slices on a baking tray for 5 mins, then remove and tear into pieces. Meanwhile, make the dressing by combining the ingredients in a small bowl.
  • Arrange the leaves, melon, torn mozzarella and salami pieces on a serving platter. Drizzle with the dressing and dress with the basil leaves and red chilli - perfect!
