Mozzarella with Savoury Granola
- 2 mozzarella or burrata balls, drained
- 1 lemon, zest and ½ juiced
- Olive oil
- Rocket leaves
- 1 tbsp balsamic vinegar
- For the Granola
- 100g jumbo oats
- 2 tbsp pumpkin seeds
- 50g hazelnuts
- 1 tbsp sesame seeds
- 2 tsp each cumin and coriander seeds
- 1 tsp smoked paprika
- Pinch of chilli flakes
- 1 tbsp clear honey
- 1 tbsp light soy sauce
- 1 egg white
- Preheat the oven to 180C. Mix all of the granola ingredients together, then tip onto a lined baking tray and spread out. Cook for 25 mins or until browned, stirring halfway through the cooking time. Leave to cool slightly.
- Meanwhile, pop a mozzarella ball onto each plate and sprinkle with lemon zest and a good drizzle of quality olive oil. Tip a handful of the granola onto each cheese and serve with rocket leaves tossed in balsamic vinegar and lemon juice. Divine!
