Mozzarella with Savoury Granola

  • 2 mozzarella or burrata balls, drained
  • 1 lemon, zest and ½ juiced
  • Olive oil
  • Rocket leaves
  • 1 tbsp balsamic vinegar
  • For the Granola
  • 100g jumbo oats
  • 2 tbsp pumpkin seeds
  • 50g hazelnuts
  • 1 tbsp sesame seeds
  • 2 tsp each cumin and coriander seeds
  • 1 tsp smoked paprika
  • Pinch of chilli flakes
  • 1 tbsp clear honey
  • 1 tbsp light soy sauce
  • 1 egg white
  • Preheat the oven to 180C. Mix all of the granola ingredients together, then tip onto a lined baking tray and spread out. Cook for 25 mins or until browned, stirring halfway through the cooking time. Leave to cool slightly.
  • Meanwhile, pop a mozzarella ball onto each plate and sprinkle with lemon zest and a good drizzle of quality olive oil. Tip a handful of the granola onto each cheese and serve with rocket leaves tossed in balsamic vinegar and lemon juice. Divine!
