Mushroom Pancakes
- 2 large pre-made pancakes
- Olive oil
- 1⁄2 sliced onion
- 60g smoked bacon, chopped
- Sprig of thyme
- 200g mushrooms, sliced
- For the Blue Cheese Glaze
- 200g blue cheese
- 25g butter
- 2 egg yolks
- Salt and pepper
- Preheat the grill. Heat a frying pan, add the oil, onion, bacon, and thyme, and fry for 4 mins. Add the mushrooms and cook for 2 minutes more.
- Make the cheesy glaze by placing all the ingredients into a food processor, and blitzing until smooth. To serve, lay a pancake flat, and spoon the mushroom mix into the centre. Roll the pancake up, place on a serving dish and repeat. Spoon the cheese glaze over the top, and stick under the grill for a couple of minutes until golden.
