Mushroom Paprikash Jacket Potatoes
- 1 tbsp olive oil
- ½ tsp caraway seeds
- 1 onion, sliced
- 300g mushrooms, quartered
- 1 green pepper, cut into chunks
- 2 tsp smoked paprika
- 400g tin of chopped tomatoes
- 1 veg stock cube
- 4 tbsp soured cream
- Chopped parsley
- 2 oven-baked potatoes, to serve
- Heat a large pan and toast the caraway seeds for a few seconds. Add the oil, tip in the mushrooms, pepper, and onion, and season well. Cook for 8 mins to soften everything nicely.
- Stir in the paprika, tip in the tomatoes, stock cube and half a tin of water, and cook for 5 mins to thicken. Serve generously on jacket potatoes, and top with soured cream and parsley, if you fancy.
