Mussel Pilaf

  • 250g baldo rice or similar
  • 30g butter
  • 3 tbsp olive oil
  • 500ml chicken stock
  • 500g scrubbed mussels
  • 30g dill, chopped
  • 4 tbsp orzo pasta
  • Warm the oil and butter in a large lidded pan. Add the orzo, cook for 1 minute, then add the washed rice and cook for 2 mins, stirring all the time. Pour in the stock and allow to simmer for about 15 mins, or until softened but still with a little bit of a bite.
  • Scatter the shellfish over the rice, pop the lid on the pan and simmer for 5 mins. Check that all the mussels have opened, then fold in the dill and serve.
