Mustard and Butterbean Pate with Toast
- 100g butter beans from a tin, drained
- 1 tbsp wholegrain mustard
- 1 tsp lemon juice
- 3 tbsp olive oil
- Sea salt and black pepper
- 2 slices of french bread
- 1 halved garlic clove
- Chuck the beans, olive oil, mustard, and lemon juice into your trusty food processor, and blitz until smooth and creamy. Season well, and add a little more olive oil if you want a thinner consistency.
- Heat up a griddle pan until it is smoking, and place the bread slices onto it. Griddle for a couple of minutes on each side (you want those nice char lines), then remove and rub with the garlic clove. Serve immediately.
