Nachos Done Right
- 1 tbsp olive oil
- 1 chopped onion
- 250g beef mince
- 1 tsp hot paprika
- 1 tsp ground cumin
- ½ tsp chilli powder
- 200g black beans, from a tin
- 200g corn tortilla chips
- 150g grated cheddar
- 100g cherry tomatoes, quartered
- Salt and pepper
- Soured cream, guacamole, sliced chillies etc, to serve
- Preheat the oven to 200C, and fry the onion in the oil for 5 mins or until soft and translucent. Turn up the heat and stir in the beef, chilli powder, paprika, and cumin. Cook for 5-10 mins, or until the beef is well browned. Reduce the heat and stir in the black beans, and season liberally.
- Line a roasting tin with tortilla chips, topped with half the beef mixture, half the cheddar, and half the tomatoes. Repeat with another layer of everything, and finally top with any remaining cheese. Cook in the oven for 10 mins, or until the cheese is melted. Remove from the oven, and serve with all your favourite toppings and sides.
