Nori Salad
- 125g soba noodles
- 1 shredded nori sheet
- 5 radishes, thinly sliced
- 2 sliced spring onions
- 1 yellow capsicum, sliced
- 1 grated carrot
- 1 sliced celery stalk
- 1 tbsp chopped parsley
- For the Dressing
- 2 tbsp chopped pickled sushi ginger
- 4 tbsp rice wine vinegar
- 2 tbsp soy sauce
- 2 tbsp olive oil
- Salt and pepper
- Cook the noodles according to packet instructions, then drain and refresh under the cold tap. Drain again and set aside in a bowl.
- Mix all of the dressing ingredients together in a small bowl. Place the drained noodles, chopped parsley and all the vegetables in a serving bowl, then season well with salt and pepper. Pour over the dressing, toss to coat thoroughly, and serve immediately.
