Nori Salad

  • 125g soba noodles
  • 1 shredded nori sheet
  • 5 radishes, thinly sliced
  • 2 sliced spring onions
  • 1 yellow capsicum, sliced
  • 1 grated carrot
  • 1 sliced celery stalk
  • 1 tbsp chopped parsley
  • For the Dressing
  • 2 tbsp chopped pickled sushi ginger
  • 4 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • Salt and pepper
  • Cook the noodles according to packet instructions, then drain and refresh under the cold tap. Drain again and set aside in a bowl.
  • Mix all of the dressing ingredients together in a small bowl. Place the drained noodles, chopped parsley and all the vegetables in a serving bowl, then season well with salt and pepper. Pour over the dressing, toss to coat thoroughly, and serve immediately.
