Nut and Mushroom Burgers
- 80g stale bread
- 1 tsp dried thyme
- ½ onion, chopped
- ½ tsp sea salt
- 1 sliced garlic clove
- 200g brown mushrooms, chopped
- 80g mixed nuts, chopped
- 1.5 tsp sriracha or similar
- 1 tsp olive oil
- 4 brioche buns, sliced cheese and sauces etc
- Preheat the oven to 200C. Add the bread to a food processor and blitz to breadcrumbs, then add to a bowl and mix with the thyme and salt. Add the onion to a food processor with the garlic, mushrooms, sriracha and nuts, then pulse to finely chop. Mix with the breadcrumbs, then form into 4 burgers with damp hands.
- Slightly flatten the burgers and drizzle with olive oil. Add to a baking tray and cook for 20 mins, then flip and cook for 15 mins more. When ready, add to buns with a slice of cheese and all your favourite sauces and salads.
