NYC Deli Burger

  • 300g quality beef steak mince
  • 2 tsp garlic salt
  • 1 tsp chilli powder
  • Oil for frying
  • 4 slices of emmental cheese
  • 8 slices of peppery pastrami
  • 4 brioche buns, lightly toasted
  • 4 tbsp pickled cabbage
  • Sliced gherkins
  • For the Sauce
  • 4 tbsp mayo
  • 1.5 tbsp horseradish sauce
  • 2 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • 1 finely chopped shallot
  • Mix all the ingredients for the sauce in a small bowl, season well and set aside. Mix the mince with the chilli, garlic salt and plenty of pepper, and divide into 4 balls. Form into thick patties, season well and rub with a little oil.
  • Fry the burgers in a little oil for 2 mins on each side, then top with a slice of cheese and a few pastrami slices. Cover the pan to let the cheese melt for a couple of minutes. Assemble the burgers by spreading the buns with a generous slick of the sauce, then add a spoonful of pickled cabbage, then the burger, pastrami, cheese and some gherkins. Add the top of the bun and serve with fries - perfect!
