One Pot Chorizo Pasta
- 150g chopped chorizo
- 4 chopped garlic cloves
- 2 red and 2 yellow peppers, chopped
- 160g halved mushrooms
- 400g tin of chopped tomatoes
- 3 tbsp tomato paste
- Pinch of chilli flakes
- 2 tbsp red wine vinegar
- 500g spaghetti
- 1 litre boiled water
- Handful of torn basil leaves
- 30g grated parmesan cheese
- Add the chorizo to a large casserole dish and cook for 3 mins to release the oils. Add the peppers, mushrooms and garlic and cook for 3 mins more, then tip in the chopped tomatoes, tomato paste, chilli flakes and vinegar. Mix in the spaghetti and boiling water, and stir well.
- Bring the mixture to the boil, then reduce the heat and simmer - covered - for about 12 mins or until the pasta is al dente and the sauce has reduced. Stir the mixture to combine everything thoroughly, then stir in the basil, some seasoning and finish with parmesan to serve.
