Onion Bhaji
- 2 eggs
- 3 onions, sliced into rings
- 120g plain flour
- 1 tsp ground coriander
- 1 tsp cumin seeds
- 3 tbsp veg oil, for frying
- Beat the eggs in a bowl, and stir in the onion rings to completely cover. Add the flour and spices, and stir well to combine.
- Heat the oil in a heavy frying pan, and when hot, add large spoonfuls of the bhaji mix to fry for 1 minute, or until golden and crispy. Turn the bhaji over and fry for another 30 seconds, then remove and drain on kitchen paper. Serve hot or cold with chutneys.
