Oyster Mushroom Steaks
- 80ml olive oil
- 1 crushed garlic clove
- 1kg oyster mushrooms
- 8 sprigs of thyme
- 1 bunch of watercress
- Preheat the oven to 200C. Line a baking tray with paper. Combine the garlic and oil in a small bowl, and arrange the mushrooms - keeping any clusters together - in a single layer on 4 separated quadrants of the tray to create 4 ‘steak’ shapes. Drizzle with the garlic oil, top with the thyme sprigs and season generously. Top the mushrooms with another sheet of baking paper and then a second tray to squash the mushrooms flat. Roast for 30 mins.
- Increase the oven to 220C and remove the top baking tray and paper. Cook for another 10 mins to crisp up the mushrooms, and then serve with your favourite steak sauce and a pile of watercress. Delicious!
