Oysters with Avo, Smoked Salmon and Sour Cream

  • 20 fresh oysters, shucked
  • 1 lemon, juice only
  • 2 avocados, mashed
  • 100g smoked salmon slices
  • Grated parmesan
  • 20 tbsp sour cream
  • 50g caviar or other fish roe
  • Place the oysters in the half shell on a baking tray. Squeeze a little lemon juice onto each oyster and top with a small amount of mashed avocado. Place a layer of smoked salmon onto the avocado and then sprinkle with enough parmesan cheese to cover.
  • Bake the oysters for 5 mins at 180C or until sizzling, then serve with a dollop of sour cream and a finishing flourish of caviar.
