Oysters with Ginger and Chilli
- ½ thumb-sized piece of ginger, grated
- 6 tbsp white wine vinegar
- 1 red chilli
- Chopped coriander
- 1 tsp sugar
- 6 fresh oysters
- Carefully shuck the oysters and loosen the flesh from the shell, then place in the half-shell on a bed of crushed ice or rock salt.
- Mix the grated ginger with the vinegar. De-seed and finely chop the chilli, and stir into the vinegar with some chopped coriander and the sugar until dissolved. Serve in a small bowl alongside the oysters, or add a spoonful to each oyster and serve already dressed.
