Oysters with Ginger and Chilli

  • ½ thumb-sized piece of ginger, grated
  • 6 tbsp white wine vinegar
  • 1 red chilli
  • Chopped coriander
  • 1 tsp sugar
  • 6 fresh oysters
  • Carefully shuck the oysters and loosen the flesh from the shell, then place in the half-shell on a bed of crushed ice or rock salt.
  • Mix the grated ginger with the vinegar. De-seed and finely chop the chilli, and stir into the vinegar with some chopped coriander and the sugar until dissolved. Serve in a small bowl alongside the oysters, or add a spoonful to each oyster and serve already dressed.
