Oysters with Horseradish Dressing

  • 24 fresh shucked oysters
  • Crushed ice, to serve
  • For the Dressing
  • 3 tbsp white wine vinegar
  • 2 tbsp diced shallots
  • 1 tsp clear honey
  • 4 tbsp diced green apple
  • 1.5 tbsp grated horseradish
  • 1 tsp crushed pink peppercorns
  • Dill sprigs, to serve
  • Mix the shallots and vinegar in a small bowl and leave to stand for an hour in the fridge. When ready, stir all the other dressing ingredients, except for the dill, into the mixture and place in a serving bowl.
  • Arrange the shucked oysters in the half-shell in the crushed ice. Top each oyster with ¼ tsp of the dressing (or more, if you fancy), and top with a dill sprig. Serve immediately for a delicious opening option to a festive feast.
