Oysters with ‘Hot Ice’

  • 500g sugar
  • 3 limes, zest and juice only
  • 2.5 grapefruits, juice only
  • 3-4 jalapenos, finely chopped
  • 50ml tequila
  • 12 live oysters, shucked to serve
  • Gently dissolve the sugar in 500ml of water over a low heat. Stir in the lime juice and zest, the chillies, tequila and grapefruit juice, then pour into a plastic container and place in the freezer.
  • Every 30 mins or so, rough up the freezer mixture with a fork to form crystals. Once spoonable, serve the spicy ice on the freshly shucked oysters. Beautiful!
