Papaya and Mangetout Salad

  • 180g beansprouts
  • 180g mangetout
  • 1 papaya, cubed
  • 1 lime, juice only
  • 25g peanuts
  • Handful of torn basil
  • Handful of mint, chopped
  • Heat a large frying pan and toss in the beansprouts and mangetout with 1 tbsp of water. Cook for 3 mins, then remove from the heat and toss through the lime juice and papaya. Serve scattered with the herbs and peanuts. Easy!
