Papaya and Mangetout Salad
- 180g beansprouts
- 180g mangetout
- 1 papaya, cubed
- 1 lime, juice only
- 25g peanuts
- Handful of torn basil
- Handful of mint, chopped
- Heat a large frying pan and toss in the beansprouts and mangetout with 1 tbsp of water. Cook for 3 mins, then remove from the heat and toss through the lime juice and papaya. Serve scattered with the herbs and peanuts. Easy!
