Paprika Pork Wraps
- 40ml olive oil
- 500g pork tenderloin, cut into chunks
- 1 sliced onion
- 1 green and 1 yellow pepper, sliced
- 1 tbsp smoked paprika
- 1 tsp ground cumin
- 8 flour tortillas
- Coriander, guacamole and rocket leaves to garnish
- Fry the pork in the oil for 8 mins or until golden brown all over. Add the peppers and onion and stir well, then cover and cook for 3 mins to cook the meat through. Remove the lid, add the paprika, cumin and some seasoning, and cook for 3 mins more.
- Heat another frying pan and warm the tortillas for 15 seconds on each side. Lay them on a flat surface and spoon the pork filling into each one, then top with your favourite garnishes, roll up and enjoy!
