Parisian Steak Tartare

  • 200g quality beef fillet steak
  • 120g finely chopped shallot
  • 3 finely chopped mini gherkins (cornichons)
  • 2 tsp finely chopped capers
  • 2 tbsp finely chopped parsley
  • 1 tsp Dijon mustard
  • 2 egg yolks
  • Fries to serve
  • Trim the beef of any sinew and finely chop using a sharp knife. Mix in a bowl with the cornichons, shallot, capers and parsley, then stir in the mustard and some seasoning. Mix together, then spoon onto 2 plates and shape into a pair of rounds. Make an ident on the top, and place an egg yolk in each. Serve straight away with hot french fries for sharing.
