Parma Ham Pork Chops
- 2 x 100g pork tenderloin pieces
- 2 tsp chopped sage leaves
- 2 slices of parma ham or prosciutto
- 1 tsp olive oil
- 2 tsp balsamic vinegar
- Salad leaves, to serve
- Give the pieces of pork a good bash with a rolling pin to flatten. Sprinkle with the chopped sage, some salt and pepper, then top each one with a slice of parma ham.
- Heat the oil in a frying pan and cook the pork for a couple of minutes on each side, turning carefully as you do. Add the balsamic vinegar to the pan and let it sizzle for a minute or so, then serve with pork with a drizzle of pan juices and a handful of salad leaves.
